Insanely Good Gluten-Free Vegetarian Pizza with a delicious Mediterranean Twist!

This recipe is lactovegetarian (contains goats milk and cow’s milk) but dairy can be substituted for dairy-free. Gluten-free, egg-free, wheat-free, nut-free. The base used is lactose-free.
As my husband bit into my gluten-free vegetarian pizza, he said, and I quote: “I’ve eaten a few pizzas in my life, but this one is probably the best one yet!“
-The best one! And it’s GLUTEN-FREE VEGETARIAN!! My husband is a pretty normal gluten-eating Australian male, so he is in no way deprived of pizza. Yet, he thinks this recipe tops all those cheese-laden, type 0 flour, pepperoni and ham takeaway pizzas he has chewed through in his 34-year long life. Not bad!! 🙂
And I couldn’t agree more. Biting into a rich and lush flavour explosion of a pizza, with a gorgeous crispy base, sure beats most other options. This vegetarian gluten-free pizza recipe is the BOMB! And the bonus is a healthier body and a lighter conscience.
Vegetarian pizza might sound like a duller option at first, but that assumption couldn’t be further from the truth. Ham and pepperoni alone do not an adventurous pizza make, and you’d be surprised at the abundance of flavours and texture you can add with an exotic mix of vegetables or even fruit. Take my word for it: you will not be missing any sort of meat after taking a bite of this amazing pizza!

I have, over time, perfected my own gluten-free pizza dough recipe, but, in turn, I sometimes forget how crazy those first few rounds of gluten-free baking was – and how much of a temperamental challenge gluten-free dough can present you with. However, I was once reminded when my lovely hubby decided he’d like to surprise me with a homemade meal..
Man vs. dough
We’ve always liked to have homemade pizza on Saturday nights; it’s been somewhat of a tradition in my family for as long as I can remember. My mother used to make the whole thing from scratch, and us kids would look forward to Saturdays with stars in our eyes. We have tried to keep this tradition alive in our household too, and it (not surprisingly) usually comes down to me to roll up my sleeves.
Only one lovely Saturday evening not too long ago, I’d had a rather long and exhausting work day, and my better half secretly decided to grab the bull by the horns and surprise me with a pizza ready-made.
He is quite a planner my man, and you can bet your bottom dollar he had looked over the ingredients at least two or three times before he started. Never the less, there must have been a flaw in his calculations..
The kitchen was awfully quiet for a long time, suspiciously so, and I was starting to wonder what was going on. I figured, however, that he must have had a surprise in mind, so I let him be. Time kept passing, and not a sound. Until suddenly I heard a quiet “help..”. I wasn’t sure whether my ears were deceiving me, until a louder cry sounded through the walls:”please come help me!”
I thought he must have hurt himself, so I jumped up..
Gluten-free pizza dough fail
I’ll never forget what appeared before me as I turned the corner; if I hadn’t known better I would have thought that a bowl of dough had plotted against him and ambushed him when he wasn’t paying attention.
The bench was covered in sticky patches from every new spot he had tried to roll his dough; each with a new piece of utensil still attached. Flour filled the room and appeared the remnants of a middle eastern sand storm.
My hubby reminded me of a toddler who had snuck into the kitchen and opened the pantry; he was covered in flour head to toe, and, most interestingly, his hands were trapped. Every finger was webbed together by sticky gluten-free dough that had failed to firm. After many attempts at freeing himself and conquering the unruly mixture, he had managed to cover most body parts (and kitchen parts) in flour and dough.
As I entered the kitchen he turned towards me, hands in front of his body and fingers spread as wide apart as the dough would allow him; “Please take it away!” he said with an almost claustrophobic panic in his eyes. There was no mistaking the gravity of the situation; he simply couldn’t take another minute of it. I don’t know what feeling was stronger; the disappointment over the failed surprise, or the absolute despair at being physically overpowered by dough. I only wish my first reaction had been to reach for my camera!
Either way, that was, unfortunately, the last time he attempted pizza dough from scratch. Not the last pizza, though. He is pretty good at coming up with creative toppings, so as long as there’s a frozen base in the house, he can still surprise me with pizza..
The best ever frozen gluten-free pizza base!
Ok, so it’s technically not a pizza base, but an actual pizza. But, the frozen gluten-free Margherita pizza from Schär really, truly makes for an excellent pizza base for any topping! This was the first time I’d tried it, and I really had no idea how it would turn out, but, in all honesty, I was totally excited with the result! I will, without a doubt, fill my freezer with these for an easy pizza option from now on.
For a while, I’ve used those fresh, ready-to-roll gluten-free pizza dough bases that you can find in the fridge section of the supermarket. I really like them, and when they were first introduced I was super excited with them. However, after trying the frozen gluten-free Margherita pizza from Schär, I’m less impressed with the fresh ones and more impressed with my new discovery! Seriously. I love this pizza, I really do!
Never mind the pure ease of pulling a ready base out of the freezer which has already got the (lactose-free) mozzarella cheese and tomato sauce base on it. Never mind that these pizzas are preservative-free. Never mind that you can top them as you please, or not top them at all. -Just the fact that Schär has managed to create a frozen gluten-free pizza with a crust that is a match to any regular pizza base at its best, is a great reason to fill your freezer with them!
I’m a big fan, and, apparently, so is my husband, which will save me a lot of sticky fingers and messy kitchens from now on 🙂
And, with that being said, here is my recipe for the most awesome gluten-free vegetarian pizza ever created 🙂
Gluten-Free Vegetarian Pizza with Mediterranean Flavours
- Frozen gluten-free Margherita pizza from Schär
- Marinated, pitted green olives
- Marinated, pitted kalamata olives
- Marinated artichoke hearts
- Soft, sundried tomatoes (marinated works fine)
- Red capsicum
- Flavourful fresh mushroom
- Avocado (soft)
- Red onion
- Flaked parmesan cheese (optional for lactose-free)
- Cubed goats feta cheese (optional)
- Pre-heat your oven to 250 c
- Cut the red onion and capsicum into skinny wedges
- split the artichoke hearts into 4’s
- chop the mushrooms into small pieces
- Slice the avocado into thin wedges
- chop the green olives
- Spread all the fillings (except the rocket and the parsley) evenly across the pizza base, and bake for approximately 10 minutes, or until it’s baked to your liking (nb: all ovens are different!)
Serve hot with chopped parsley and fresh rocket leaves -and don’t expect leftovers!
