Oven Roasted Herb Potatoes with Crispy Skin!

I just love these little potatoes, with their crispy skin and creamy centre! They make the perfect side to any meal, and especially Christmas dinner!

Scandinavians are serious about potatoes. It is no joke; we eat potatoes with just about every hot meal. Especially the older generation – they simply cannot understand why you wouldn’t add potatoes to everything! It is not so strange perhaps, seeing as our country survived the great famine thanks to the nutrient rich little golden nugget in the ground.

Christmas is no different; we want our potatoes. Except at Christmas we buy the wonderfully nutty and golden almond potatoes; a type which rich flavour we only enjoy during the holidays.

This recipe calls for any potato, but if you can get the beautifully fresh new-potatoes that can only come from your local farm, then all the better.

These are wonderfully easy to whip up, and they are quite the little treat in their own right!

Delicious Oven Roasted Potatoes with Herb Butter - A Scandinavian Christmas Classic  #glutenfree #dairyfree #paleo #sugarfree #dinner #recipe You’ll need:

  • About 5 potatoes per person; small ones, the ones that can fit inside your fist.
  • 2 tbsp butter (or butter alternative)
  • Chives, mint, parsley, thyme -finely chopped
  • 1 clove of garlic
  • 2 tbsp rock salt



  1. Wash the potatoes and brush the skin (do not peel)
  2. Heat the oven to 180 c
  3. In a bowl, beat the butter until it is smooth. Use a garlic press, and add the garlic paste to the butter mixture whilst stirring. Toss the potatoes in the butter mixture, making sure that they are completely covered. Cover the potatoes in the chopped chives, and lay everything evenly on a baking tray. Sprinkle the rock salt over them and move the tray around so that it is evenly distributed.
  4. Bake until the potatoes have a golden to brown crust (roasting time depends on the size of the potatoes) approx. 20 minutes. You can stick a fork into them to check if they are done.
  5. Once you’ve removed them from the oven you dust off the excess salt, and sprinkle some fresh chopped herbs over them before you serve them.

These little olden nuggets go perfectly with Norwegian Meatballs!
