These pancakes are fantastic if you have bananas to use up, you need work-out food on the go, you’re longing for something sweet but don’t want to reach for the sugar, or if you want to impress with a yummy treat on a Sunday morning!

Fast & Fantastic 3 Ingredient Gluten Free Banana Breakfast Pancakes

You need only 3 ingredients!

1 ripe banana
2 eggs
1/4 cup gluten free flour

Whisk the eggs, mix in flour, mash the bananas and add to the mixture; make pancakes!

I’ve served them up with original maple syrup, but they are just as good and super sweet without so you really don’t need a sweetener. Also, they stay soft and moist for ages, so you can easily pack them in a lunch or keep them in the fridge until the next day.

If you want to give breakfast a fun and funky twist, try making the pancakes in cookie cutters! Kids will love the shapes! Just remember to oil the cookie cutters before you pour batter into them, or else you might have some trouble getting the pancakes out of the molds.

  1. I have a recipe similar to this only there is no flour whatsoever in it, 1 banana, 2 whole eggs, 1 egg white, whipped to form peaks, and cinnamon. Beat whole eggs, mash banana, add as much cinnamon as desired, then combine all ingredients together. Put coconut oil in frypan, heating over medium heat, then pour mixture in batches to make little pancakes, add more cinnamon if desired to garnish, yummy!

    • Thanks Lorieb, I make these all the time, and my husband can’t get enough of them. Also, they have got me through some rough patches with gluten exposure, because they are so mild on your stomach and yet so nutritious!
