Peppernuts – A yummy gluten free take on gingerbread!

We call them “Peppernøtter” which means peppernuts. They contain pepper and they’re shaped like nuts, so why not.

You are gonna love these little golden nuggets! They are crispy on the outside, soft on the inside and very easy to make.

The best thing about making peppernuts is that they’re made from that last pile of gingerbread dough that never seems to get any smaller. When everyone’s had enough of rolling dough and making little men; peppernuts to the rescue!

You’ll find the gingerbread recipe here:

Simply roll gingerbread dough into a long sausage, about two cm thick. Cut it into three cm long pieces and roll each piece into a little ball.

If you like almonds they make for a tasty twist:

Boil water and soak however many almonds you need in the hot water for about 5 minutes. Pick them out of the water (leave the rest in so they don’t dry out) and pop the peel off of them. Stick an almond (pointy end down) into each peppernut, pop the tray into a preheated oven at 160 c for about 13 minutes. Let them cool off on a cooling rack straight away. Don’t leave them in too long if you wanna keep the soft center.

You may decorate the peppernuts with some icing after they’ve cooled down.
