Fast & Fantastic 3 Ingredient Gluten and Dairy Free Protein & Potassium Breakfast Pancakes!

I want to introduce you to the worlds Best & Easiest breakfast!
But first, just take a look at what this crazy lady has been up to lately? Check out my friend and I at the Australian Outback Spectacular last night!
This is the second time I’ve seen the show. I can highly recommend it to people with food allergies/intolerances, because I was very well taken care of both times, the food was delicious, and everything was handled with ease! Plus, it’s such a cool show, I always take friends and family there when they visit from overseas. Love it.
This last week I’ve had a delightful visitor from Norway. Her name is Stine (pronounced Steeneh) and she is a bubbly and energetic yoga and cycling enthusiast! We have had a ton of fun visiting pretty much every available tourist attraction on the coast, as well as cooking up a storm and practising some wonderful yoga for digestion.
In fact, we have put together a brilliant yoga program to soothe and aid your digestion, which will feature on the blog next week! Each exercise can be done with ease in the comfort of your own home, without any pricey equipment, and suitable for any level of fitness. Simply a collection of fantastic moves that your body and your tummy will be grateful for. All this to come next week! Here’s a sneak peak:
Stine wanted to learn more about gluten free cooking during her visit, and we have put together some beautiful and tasty meals. However, little did I know that one of my now favourite foods would be an invention of Stines making; the Easy Peasy Banana Breakfast Pancakes!
These little golden nuggets whip up in three minutes, they are super moist and naturally sweet, and not to mention super healthy! With all the goodness of banana coupled with the protein and nutrients from the egg, little can beat these pancakes both on flavour and health benefits!

These pancakes are fantastic if you have bananas to use up, you need work-out food on the go, you’re longing for something sweet but don’t want to reach for the sugar, or if you want to impress with a yummy treat on a Sunday morning!
You will need only 3 ingredients!
1 ripe banana
2 eggs
1/4 cup gluten free flour
Whisk the eggs, mix in flour, mash the bananas and add to the mixture; make pancakes!
I’ve served them up with original maple syrup, but they are just as good and super sweet without so you really don’t need a sweetener. Also, they stay soft and moist for ages, so you can easily pack them in a lunch or keep them in the fridge until the next day.
If you want to give breakfast a fun and funky twist, try making the pancakes in cookie cutters! Kids will love the shapes! Just remember to oil the cookie cutters before you pour batter into them, or else you might have some trouble getting the pancakes out of the molds.

I normally don’t comment on recipes, but I must say that these are AMAZING! So easy to make and really great! I brought a bunch to the park for all my one year old daughters friends, and they LOVED them! I made them bite size for their little hands. Maybe I’ll add some cottage cheese next time and it will be a full balanced meal 🙂 THANKS

Can you make these with a Flax egg instead of a real egg? Or with one flax egg and one real egg?
