Refreshing Watermelon Popsicles
A little piece of summer can do us all some good I recon, which is why I made up some watermelon popsicles yesterday!
These refreshing popsicles are made with real watermelon, complete with summer breeze and blue skies (in your mind anyhow).
(amounts depend on your popsicle tray)
Fructose (or other sweetener)
Green and red food colouring
Crush and sift watermelon, add dissolved gelatine. Use about half the recommended amount. You may add a bit of red food colouring for fun. Fill half the popsicle mold with the watermelon juice and pop it in the freezer.
Squeeze a lime into a cup of apple juice and add some green food colouring. Dissolve some fructose (or sweetener) in two table spoons of hot water, and add this to the green juice. Add gelatine in the same way you did with the watermelon juice.
Once the watermelon juice has semi-frozen, take it out of the freezer and carefully add a thin layer of yoghurt. The yoghurt will become the white flesh of the watermelon. Pop it back into the freezer again until the layer hardens just enough to add the next one.
Lastly you pour the green juice into the trays and finish off by carefully pushing the popsicle sticks down through the layers. Freeze again and practice your patience.
When the popsicles are done they look just like watermelon and taste like it too (with a limey twist).
